Kidney Friendly Overnight Oats

Enjoy these creamy, kidney friendly overnight oats for satisfying make-ahead breakfast that is low is sodium and phosphorus. Rich in fiber yet gentle on your kidneys, these recipe takes minutes to prepare and delivers a delicious start to your day!
Servings: 4 (serving size: 1.5 cup)

Ingredients

  • 1 cup rolled oats, dry
  • 2 tbsp raisins
  • 2 cup almond milk, unsweetened (or other milk alternatives)
  • 2 tbsp pepitas (hulled, uncooked pumpkin seeds)
  • 2 apples (EverCrips is my favorite!)
  • 2 tbsp almonds, sliced
  • 2 bananas (very ripe, chop into large chunks)

Instructions

  • Mix all ingredients together
  • Soak overnight or for at least 4-6 hours
  • Stir with a spoon right before serving in a bowl
